Mantis shrimp split open to show the prize inside — a thick band of vivid orange roe running the length of the body, wrapped in sweet white meat and a ridged, amber-toned shell.

The roe is dense, rich and faintly nutty, and it is the reason mantis shrimp are sought out over ordinary prawns. Steam them briefly with ginger, or flash them in a hot wok with garlic and chilli, and eat them straight from the shell.

Selected for well-filled bodies so every piece carries a generous line of roe.
